Dinner for Two

Tonight we made pizza! I wish we had made the dough ourselves, but I didn't have enough time in the day. Instead we used the Whole Foods 365 brand pizza dough, they are pretty tasty and you get 2 to a pack so you can freeze the other one for later.
I went with a Hawaiian themed pie this evening, using proscuitto, pineapple, some green onions, and a red pepper sauce. And instead of using mozzarella I topped the pizza off with some feta.

But the thing I most looked forward to was my carrot cake for two. I was in a baking mood today and tried to find a cake recipe that only called for one egg. I stumbled across one that seemed edible, but I tweeked it to suit me and my pantry. I also made it as low in fat and calories as possible. The verdict? Moist and flavorful, the cardamom made this cake.


Carrot Cake for Two

Cake:
1 egg
1/4 c unsweetened applesauce
1/4 c flour
1/3 c sugar
1/3 c shredded carrots
pinch of salt
pinch of baking soda
pinch of baking powder
a shake of cinnamon
a shake of cardamom

Frosting:
2 tbsp whipped Philadelphia cream cheese
drop vanilla extract
packet of Truvia (fruit derived sweetener)

Preheat oven to 350 degrees. Mix applesauce, egg, and sugar till blended. Stir in remaining ingredients and stir till well incorporated. Now here's the tricky part, I happened to have a small ceramic baking dish to use, but you can also use 2 personal ramekins if you have them. Grease the dish(es) an sprinkle with cinnamon, pour batter in and bake for 20-30 minutes.
Remove from oven when baked through and let cool. Frost and enjoy!
